Meatless Friday

I didn’t plan to have all these food posts in a row, but just the other night here in Rome I was at a Spanish priest’s home for dinner, and there I tried for the second time in my life a delicious meatless meal from Spain – the tortilla. It dawned on me this morning: this would be an excellent Friday meal!

Unlike the (Mexican) tortillas that we are used to in the States – flatbread made of flour or corn – the Spanish tortilla is more like a potato omelette. It’s a delicious and simple meal and is easy to make. Very filling.

Of course, if you are in the mood for a particularly heavy Friday penance, you could always eat what my friends had last evening
