My Lunch Today

Happy Friday of Lent!

Looks sort of like meat but really doesn’t taste like it. From their ingredient list: “A wholesome slice of goodness made from a fantastic recipe that includes soy, carrots, corn and red peppers.”

I had a Subway vegetarian patty sub today – a good option here in Europe, but I think in the States their vegetarian sub is just a bunch of salad on a roll. In any case, mine didn’t look as nice as the demo photo from their web site, above.

What meatless meal are you making today?

    We are taking care of sick grandchildren today so their parents can work so it looks like the old lenten staple of fish sticks and mac and cheese here in Southern Maryland.

    Broccoli-Potato Soup; Brown Rice & Red Bean Triscuits YUM.

    Penne pasta with olive oil, basil, oregano, and cheese with a side of zucchini (leftovers from last night’s dinner)

    I’ve had “vegetarian patties” here in Rome, and “wholesome slices of goodness” wouldn’t be QUITE the first phrase I would use to describe them. Bravo for really embracing a spirit of penance today!

    • Ha! Well, not to my credit, Subway’s “veggie patty” is nothing that some of their “Chipotle Southwest” sauce can’t handle. When in doubt, stun your taste buds with heat!

    Well, since tonight is youth group for our eldest two at St. Peter’s (here in Birmingham, AL), hubby and I will likely grab a quick fish sandwich and fries somewhere nearby with the baby girl until it’s time to go pick them back up. They will be having pizza (cheese, I’m sure) and watching a movie in their PJs with their fellow K-5th graders. Hope you have a blessed Friday, Father! You and all of your brother priests are in our prayers!
